Your wing is your engine. If it is too small, you will not fly. If it is too big, you will get overpowered and dragged. The right choice depends on your body weight and the wind strength.
The Standard Reference
The most common wing size is 5 meters (5m). For an average adult male of 80kg (175lbs), a 5m wing covers most conditions from 15 to 22 knots.
The Logic of Size
Heavier riders need more surface area to generate lift. Lighter riders need less. As the wind gets stronger, everyone sizes down to maintain control.

The "Plus One" Rule for Beginners
Beginners lack technique. They rely on raw power to get on the foil. If you are learning, add 0.5m or 1m to the recommended size. You can size down once you learn to pump the wing efficiently.
